In the initial step, it is essential to separate the egg yolks from the whites. Set the egg whites aside and combine the yolks with the sugar in an appropriate bowl. Utilize an electric mixer to beat the yolk and sugar mixture for a duration of 6 to 7 minutes, or until the color becomes light and the texture attains a creamy thickness. Subsequently, incorporate vanilla and mascarpone cheese into the yolk mixture. Ensure that all ingredients are blended thoroughly until achieving a smooth consistency, and then transfer the mixture to a larger bowl.

 

Following this, clean the mixer blades thoroughly. Pour the egg whites into a clean bowl and beat with an electric mixer at medium speed for approximately 3 minutes, or until the mixture becomes thick and fluffy. The texture should be sufficiently stable so that it does not fall out when the bowl is inverted. Gently fold half of the cream mixture into the beaten egg whites using circular motions. Then, add the remaining cream mixture and combine evenly.

 

Prepare either espresso or instant coffee and allow it to cool completely. If using instant coffee, dissolve it in boiling water and set aside. Select a rectangular dish, preferably made of Pyrex, and briefly immerse the ladyfingers in the cooled coffee. It is crucial to remove them quickly to prevent them from becoming overly soft.
